The annual S. Pellegrino Asia's 50 Best Restaurants list has been announced Monday night in Singapore.
The awards started in 2002 and are judged by high profile chefs, food writers and industry leaders.
Tokyo's Narisawa which applies French techniques to Japanese ingredients, won top accolades. CNN reported one of their most interesting signature dishes includes Wagyu rump roast marinated in leek and then basted in olive oil and then carbonized on the exterior.
Yoshihiro Narisawa, who owns the restaurant, said to The Wall Street Journal that his win was a "big surprise. I can't believe it," he said. "I don't know what attracts people to my restaurant, but I know what I do is not found anywhere else. You cannot replicate it,"
The ceremony took place at the Marina Bay Sands resort in Singapore and other winners such as Tokyo's Nihonryori Ryugin which came in second were announced. Bangkok's Nahm came in second and French restaurants, Amber in Hong Kong and Andre in Singapore came in fourth and fifth.
A lifetime achievement award went to Paul Pairet who is a French chef based in Singapore. He owns two restaurants that are in the top ten Mr. & Mrs. Bund and Ultraviolet.
"The whole world is competing with each other," he said to The Wall Street Journal. "We definitely think we're as good as anyone in the West."
"Organised by Restaurant magazine, Asia's 50 Best Restaurants list is an annual snapshot of the opinions and experiences of over 900 international restaurant industry experts. What constitutes "best" is left to the judgment of these trusted and well-travelled gourmets," says the award's website.
